Homemade & Healthy Butternut Squash Soup
Butternut squash is an excellent source of vitamin A, vitamin C, and fiber.
This is vegan and gluten free recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 400°F (200°C). Cut the butternut squash in half lengthwise and remove the seeds. Place the halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 40 minutes or until the flesh is tender.

Meanwhile, heat olive oil in a large pot over medium heat. Add the onion and garlic cloves, and sauté until softened.

Scoop out the roasted butternut squash flesh and add it to the pot. Stir in the ground cumin and ground cinnamon.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.

Using an immersion blender or a regular blender, blend the soup until smooth.

Stir in the coconut milk and season with salt and black pepper.

Cook for an additional 5 minutes, then remove from heat.

Serve hot and garnish with a drizzle of coconut milk and a sprinkle of ground cinnamon, if desired.
