Preheat the oven to 350°F (175°C).

In a large bowl, combine rolled oats, almonds, dried apple slices, honey, almond butter, vanilla extract, cinnamon, salt, and melted coconut oil. Mix well.

Line a baking dish with parchment paper and press the mixture firmly into the dish.

Bake for 20-25 minutes, or until golden brown.

Remove from the oven and let it cool completely.

Once cooled, cut into bars.

Store in an airtight container for up to a week.
