Rinse the split peas under cold water.

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic, and sauté until fragrant.

Add chopped carrots and celery stalks, and cook for a few more minutes.

Add rinsed split peas, bay leaves, vegetable broth, water, salt, and black pepper.

Bring the soup to a boil, then reduce heat and simmer for about 1 hour or until the split peas are tender.

Remove bay leaves and use an immersion blender to puree the soup until smooth.
