  3. Remove from heat and let the soup cool slightly.
  4. Transfer the soup to a blender and blend until smooth.
  5. Return the soup to the pot and stir in the fresh herbs, salt, pepper, and lemon juice.
  6. Cook for an additional 5 minutes, then remove from heat.
  7. Serve hot, garnished with a dollop of Greek yogurt if desired.
