Heat olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

Add the zucchini and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the zucchini is tender.

Remove from heat and let the soup cool slightly.

Transfer the soup to a blender and blend until smooth.

Return the soup to the pot and stir in the fresh herbs, salt, pepper, and lemon juice.

Cook for an additional 5 minutes, then remove from heat.

Serve hot, garnished with a dollop of Greek yogurt if desired.
