Herbed Tomatoes, Beans & Rice Supper
Tomatoes are technically a fruit, but they are often referred to as a vegetable in cooking.

Heat olive oil in a large pan over medium heat. Add minced garlic and chopped onion, sauté until translucent.

Add rice and cook for 2 minutes, stirring constantly.

Add vegetable stock, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.

Add tomatoes, cannellini beans, and mixed herbs. Cook for an additional 5 minutes.

Remove from heat and let it rest for 5 minutes before serving.

Garnish with fresh herbs if desired. Enjoy!
