In a large skillet, heat the olive oil over medium heat. Add the red onion and garlic, and sauté until softened.

Add the red bell pepper, zucchini, and yellow squash to the skillet. Cook for 5 minutes, until the vegetables are tender.

Stir in the blanched corn and green beans. Cook for an additional 2 minutes.

Remove from heat and stir in the fresh basil and parsley. Season with salt and black pepper.

Let the succotash rest for 5 minutes before serving.
