Quinoa is actually a seed, not a grain, and is often referred to as a ‘superfood’ due to its high nutritional value.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Rinse the quinoa under cold water.

In a saucepan, add the rinsed quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.

In a large bowl, combine the cooked quinoa, fresh herbs, cherry tomatoes, cucumber, and red onion.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the quinoa mixture and toss to combine.

Let the salad rest for 10 minutes to allow the flavors to meld.

Serve the herbed quinoa salad chilled or at room temperature.
