  1. Heat coconut oil in a pan. Add chopped onion and minced garlic cloves. Sweat them for a few minutes until translucent.
  2. Add vegetable stock and bring to a boil. Once boiling, add the spinach and sprouts to the pan. Cook until they are wilted.
  3. In a blender, blend the cooked spinach and sprouts mixture until smooth.
  4. In the same pan, heat the cashews until they become fragrant and lightly toasted. Remove from heat and let them cool.
  5. Once the cashews are cool, blend them in a food processor until finely ground.
  6. Add the ground cashews, sea salt, black pepper, lemon juice, and fresh herbs to the blender with the spinach and sprouts mixture. Blend until creamy.
  7. Adjust the seasoning if needed.
  8. Serve the creamy spinach or sprouts puree as a side dish with your favorite main course.
