  2. Toss the mixed vegetables with olive oil, salt, and black pepper. Roast in the oven for 20-25 minutes until tender.
  3. In the meantime, prepare the avocado dressing. In a blender, combine the avocado, lime juice, garlic, cilantro, and salt. Blend until smooth.
  4. Cook the quinoa according to package instructions.
  5. In a pan, stir-fry the red onion and cherry tomatoes until softened.
  6. Assemble the veggie bowls by dividing the mixed greens, roasted vegetables, quinoa, stir-fried onion and tomatoes, and avocado dressing among four bowls.
  7. Serve immediately and enjoy!
