  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the whole wheat flour, ground ginger, cinnamon, baking soda, and salt.
  3. In another bowl, whisk together the coconut oil, molasses, honey, vanilla extract, and unsweetened applesauce.
  4. Gradually add the wet ingredients to the dry ingredients and mix until well combined.
  5. Roll the dough into small balls, about 1 tablespoon each.
  6. Roll the balls in the coconut sugar and turbinado sugar.
  7. Place the balls on a baking sheet lined with parchment paper.
  8. Bake for 10 minutes or until the edges are golden brown.
  9. Allow the gingersnaps to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
