Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until onions are translucent.

Add carrots, vegetable broth, ginger, turmeric, cumin, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until carrots are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in coconut milk. Cook for an additional 5 minutes, until heated through.
