Carrot Timbale

Preheat the oven to 180°C (350°F).

Peel and grate the carrots.

Finely chop the onion and mince the garlic.

Heat olive oil in a pan and sauté the onion and garlic until golden.

Add the grated carrots to the pan and cook for 5 minutes.

Pour in the vegetable broth and simmer for another 5 minutes.

Remove from heat and stir in breadcrumbs, parsley, salt, and black pepper.

Grease ramekins or a baking dish and fill with the carrot mixture.

Press down gently to compact the mixture.

Bake in the preheated oven for 25-30 minutes, or until golden and set.

Allow the timbales to rest for 10 minutes before serving.
