Preheat the oven to 350°F (175°C).

Core the apples and place them in a baking dish.

In a small bowl, mix together the brown sugar, cinnamon, butter, raisins, chopped nuts, honey, and vanilla extract.

Stuff each apple with the mixture and pour water into the baking dish.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the apples are tender.

Serve the baked apples warm, drizzled with the syrup from the baking dish.
