Preheat grill to medium-high heat.

Slice the zucchini, red bell pepper, yellow bell pepper, and red onion into thin strips.

In a bowl, toss the sliced vegetables with olive oil, salt, and black pepper.

Grill the vegetables for 8-10 minutes, until tender and slightly charred.

While the vegetables are grilling, prepare the cilantro-lime pesto. In a blender or food processor, combine cilantro, lime juice, garlic, pine nuts, and Parmesan cheese. Blend until smooth.

Warm the pita bread on the grill for a minute on each side.

Spread a generous amount of cilantro-lime pesto on each pita bread.
