Grilled Green Bean Salad with Lentil Vinaigrette
Green beans are a good source of vitamins A, C, and K, as well as folate and fiber.
This is vegan, gluten free, high protein and quick meals recipe. Dish can be prepared in 25 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.
Grilled Green Bean Salad with Lentil Vinaigrette

Preheat the grill to medium heat.

In a pot, boil the lentils in salted water until tender, then drain and set aside.

Trim the ends of the green beans and blanch them in boiling salted water for 2 minutes. Drain and transfer to a bowl of ice water to stop the cooking process.

In a large bowl, combine the green beans, lentils, red onion, cherry tomatoes, feta cheese, and fresh parsley.

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper to make the vinaigrette.

Pour the vinaigrette over the salad and toss to combine.

Grill the salad on the preheated grill for 3-4 minutes, until the green beans are slightly charred.

Remove from the grill and let it rest for a few minutes.
