  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, sauté until onions are translucent.
  2. Add diced bell peppers, carrots, and celery. Cook for 5 minutes, stirring occasionally.
  3. Drain and rinse kidney beans and black beans. Add them to the pot along with diced tomatoes and tomato paste.
  4. Stir in chili powder, cumin, paprika, salt, black pepper, and cayenne pepper. Mix well.
  5. Pour in vegetable stock and bring the chili to a boil. Reduce heat to low and simmer for 30 minutes, stirring occasionally.
  6. Remove from heat and let it rest for 10 minutes.
  7. Garnish with fresh cilantro and a squeeze of lime juice.
  8. Serve hot and enjoy!
