Heat olive oil in a large pot over medium heat. Add chopped onion and garlic cloves, sauté until softened.

Add sliced potatoes and vegetable broth, bring to a boil and simmer until potatoes are tender.

Meanwhile, remove the tough outer leaves of the green cabbage, slice it thinly.

Add the cabbage to the pot and cook for another 5 minutes.

Season with salt and black pepper.

If desired, add sliced chorizo and cook for an additional 5 minutes.
