Preheat the oven to 350°F (175°C).

Peel and cut the carrots and sweet potatoes into chunks.

In a large baking dish, combine the carrots, sweet potatoes, honey, cinnamon, orange juice, raisins, olive oil, salt, and black pepper.

Cover the dish with foil and bake for 45 minutes.

Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender.
