  2. Add the green beans, potatoes, vegetable stock, bay leaf, thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
  3. Remove the bay leaf and thyme sprigs from the pot. Use an immersion blender to blend the soup until smooth.
  4. Serve hot, garnished with fresh parsley.
