Grapefruit Bars
Grapefruits were first discovered in Barbados in the 18th century and are believed to be a cross between a sweet orange and a pomelo.
This is vegan and gluten free recipe. Dish can be prepared in 105 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 350°F (175°C). Grease a square baking dish.

In a medium bowl, combine graham cracker crumbs, melted coconut oil, and agave syrup. Press the mixture evenly into the bottom of the prepared baking dish.

Bake the crust in the preheated oven for 10 minutes, then remove and set aside.

In a saucepan, whisk together grapefruit zest, grapefruit juice, cornstarch, maple syrup, vanilla extract, and salt. Cook over medium heat, stirring constantly until the mixture thickens, about 5 minutes.

Pour the grapefruit filling over the crust and spread it evenly.

Bake for 15 minutes, or until the filling is set.

Remove from the oven and let cool completely in the baking dish.

Once cooled, refrigerate for at least 1 hour.

Sprinkle powdered sugar on top before serving.
