In a separate bowl, dissolve the yeast in warm water. Let it sit for 5 minutes until foamy.

Add the yeast mixture, honey, and olive oil to the dry ingredients. Stir until a sticky dough forms.

Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for 1 hour.

Preheat the oven to 375°F (190°C). Punch down the dough and knead in the chopped dates and mixed seeds.

Shape the dough into a loaf and place it in a greased bread pan. Cover and let it rise for another 30 minutes.
