  1. Peel and chop the golden beets, onion, and garlic cloves.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the chopped golden beets and thyme sprigs to the pot. Cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the beets are tender.
  5. Remove the thyme sprigs from the pot. Using an immersion blender, blend the soup until smooth.
  6. Stir in the coconut milk, lemon juice, salt, and black pepper. Cook for an additional 5 minutes.
  7. Remove from heat and let the soup rest for 5 minutes.
  8. Serve hot and garnish with fresh thyme leaves, if desired.
