  1. In a bowl, mix semolina, all-purpose flour, baking soda, and salt. Gradually add water to make a smooth dough.
  2. Cover the dough and let it rest for 15 minutes.
  3. Meanwhile, boil the potatoes and chickpeas separately until cooked.
  4. Peel and mash the potatoes. Drain the chickpeas.
  5. In a bowl, mix mashed potatoes, chickpeas, chopped onion, green chili, tamarind chutney, mint chutney, chaat masala, cumin powder, and coriander leaves.
  6. Divide the dough into small balls and roll them into thin circles.
  7. Heat oil in a deep pan and fry the circles until they puff up and turn golden brown.
  8. Remove the fried circles from the oil and let them cool.
  9. Make a small hole in each fried circle and fill it with the potato and chickpea mixture.
  10. Serve immediately and enjoy!
