Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a small bowl, mix the flaxseed meal and water. Set aside for 5 minutes to thicken.

In a large bowl, combine the pumpkin puree, coconut sugar, coconut oil, vanilla extract, and the flaxseed mixture. Mix well.

In a separate bowl, whisk together the gluten-free flour blend, cinnamon, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

Fold in the chocolate chips.

Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
