Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil.

Add the quinoa, reduce heat, cover, and simmer for 15 minutes.

Meanwhile, chop the bell peppers, red onion, and cilantro.

In a large bowl, combine the cooked quinoa, bell peppers, corn kernels, cherry tomatoes, black beans, red onion, and cilantro.

In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.

Pour the dressing over the quinoa mixture and toss to combine.

Let the salad rest for 5 minutes before serving.
