In a large bowl, combine rolled oats, almonds, pumpkin seeds, dried cranberries, cinnamon, and salt.

In a small saucepan, heat honey, coconut oil, and vanilla extract until melted.

Pour the honey mixture over the dry ingredients and mix well.

Press the mixture into a baking dish and refrigerate for at least 1 hour.
