  1. Preheat the oven to 400°F (200°C).
  2. Wash the beets and trim off the tops and roots.
  3. In a bowl, mix together olive oil, honey, balsamic vinegar, salt, and black pepper.
  4. Place the beets in a baking dish and pour the glaze mixture over them.
  5. Add fresh thyme sprigs on top.
  6. Cover the baking dish with foil and roast in the preheated oven for about 40 minutes, or until the beets are tender.
  7. Remove the foil and roast for an additional 5 minutes to allow the glaze to caramelize.
