Glazed Pecan Squash Rings
Acorn squash is named for its acorn-like shape and is a winter squash variety.

Preheat the oven to 400°F (200°C).

Slice the acorn squash into rings, approximately 1/2 inch thick.

Remove the seeds and strings from the center of each ring.

In a small bowl, mix together maple syrup, olive oil, cinnamon, and salt.

Brush the mixture onto both sides of the squash rings.

Place the rings on a baking sheet lined with parchment paper.

Sprinkle pecans on top of each ring.

Bake for 25-30 minutes, or until the squash is tender and the pecans are toasted.

Remove from the oven and let rest for 5 minutes before serving.
