  1. Rinse the rice under cold water until the water runs clear.
  2. In a saucepan, bring 4 cups of water to a boil. Add the rinsed rice and cook for 15 minutes, or until the rice is tender. Drain and set aside.
  3. In a wok or large skillet, heat the vegetable oil over medium heat. Add the carrots and peas and stir-fry for 3-4 minutes, until the vegetables are tender.
  4. Add the ginkgo nuts, soy sauce, salt, scallions, and garlic to the wok. Stir-fry for another 2 minutes.
  5. Add the cooked rice to the wok and stir-fry for 5 minutes, until the rice is heated through and well combined with the other ingredients.
  6. Remove from heat and let the dish rest for 5 minutes before serving.
  7. Serve hot and enjoy!
