  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, cashew nuts, sunflower seeds, ground ginger, cinnamon, and salt.
  3. In a small saucepan, melt coconut oil and maple syrup over low heat.
  4. Pour the melted mixture over the dry ingredients and stir until well combined.
  5. Spread the mixture evenly on the prepared baking sheet.
  6. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  7. Remove from the oven and let it cool completely on the baking sheet.
  8. Once cooled, stir in dried cranberries and crystalized ginger.
  9. Transfer the granola to an airtight container and let it rest for 15 minutes before serving.
  10. Serve with yogurt, milk, or enjoy it as a snack.
