Ginger Carrot
Carrots are a great source of vitamin A and ginger has anti-inflammatory properties.

Peel and julienne the carrots.

Grate the ginger and mince the garlic.

Heat the sesame oil in a pan over medium heat.

Add the ginger and garlic, and sauté for 1 minute.

Add the carrots and stir-fry for 5-7 minutes until tender.

In a small bowl, combine soy sauce, honey, salt, and black pepper.

Pour the sauce over the carrots and toss to coat.

Cook for an additional 2 minutes.

Garnish with chopped green onions and toasted sesame seeds.
