  1. Peel and julienne the carrots.
  2. Grate the ginger and mince the garlic.
  3. Heat the sesame oil in a pan over medium heat.
  4. Add the ginger and garlic, and sauté for 1 minute.
  5. Add the carrots and stir-fry for 5-7 minutes until tender.
  6. In a small bowl, combine soy sauce, honey, salt, and black pepper.
  7. Pour the sauce over the carrots and toss to coat.
  8. Cook for an additional 2 minutes.
  9. Garnish with chopped green onions and toasted sesame seeds.
  10. Serve hot.
