  1. Prepare all the ingredients by cutting the carrots and cucumber into thin matchstick-sized pieces. Cook the rice vermicelli according to package instructions.
  2. Fill a large shallow dish with warm water. Dip one rice paper sheet into the water for a few seconds until it softens. Remove and place on a clean surface.
  3. Place a lettuce leaf on the bottom third of the rice paper. Top with a small handful of rice vermicelli, followed by the carrots, cucumber, mint leaves, and cilantro leaves.
  4. Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to form a spring roll. Repeat with the remaining ingredients.
  5. For the Thai dipping sauce, combine peanut butter, soy sauce, lime juice, minced garlic, and water in a small bowl. Stir until well combined.
