In a large bowl, combine the fresh corn kernels, all-purpose flour, rice flour, baking powder, salt, ground black pepper, spring onions, fresh coriander leaves, and red chili (if using).

Gradually add coconut milk to the mixture until a thick batter consistency is achieved.

Heat vegetable oil in a frying pan over medium heat.

Drop spoonfuls of the batter into the hot oil and flatten slightly with the back of the spoon.

Fry the fritters until golden brown on both sides, about 2-3 minutes per side.
