Preheat the oven to 375°F (190°C).

Peel and slice the beets.

In a saucepan, combine brown sugar, cornstarch, vinegar, salt, and water. Cook over medium heat until thickened.

Add butter to the sauce and stir until melted.

Place the sliced beets in a baking dish and pour the sauce over them.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 15 minutes.

Let the dish rest for 5 minutes before serving.
