  3. Add soaked white beans, bay leaves, thyme, salt, and black pepper to the pot. Pour in vegetable broth and bring to a boil.
  4. Reduce heat to low and simmer for about 1 hour or until the beans are soft.
  5. Remove bay leaves and use an immersion blender to blend the soup until smooth.
  6. Serve hot, garnished with fresh parsley.
