Delicata squash is also known as sweet potato squash due to its sweet flavor and creamy texture.

Preheat the oven to 425°F (220°C).

Cut the Delicata squash in half lengthwise and remove the seeds. Slice the squash into half-moon shapes.

In a large bowl, toss the sliced squash with olive oil, salt, black pepper, and fresh thyme.

Spread the squash evenly on a baking sheet and roast for 20-25 minutes, or until golden brown and tender.

Remove from the oven and sprinkle with grated Parmesan cheese and chopped parsley.

Let it rest for 5 minutes before serving.
