  2. Add the olive oil and water to the dry ingredients. Stir until a soft dough forms.
  3. Turn the dough out onto a floured surface and knead for 5 minutes, or until smooth and elastic.
  4. Place the dough in a greased bowl and cover with a clean kitchen towel. Let it rise for 1 hour, or until doubled in size.
  5. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  6. Punch down the dough and transfer it to the prepared baking sheet. Shape it into a rectangle, about 1/2 inch (1 cm) thick.
  7. Using a sharp knife, make diagonal cuts on both sides of the dough, creating a leaf-like pattern.
