Fougasse With Olive Tapenade
Fougasse is a traditional French bread that originated in Provence. It is often shaped to resemble a leaf or an ear of wheat, and can be enjoyed as a snack or as an accompaniment to a meal.

In a large mixing bowl, combine the flour, yeast, sugar, and salt. Mix well.

Add the olive oil and water to the dry ingredients. Stir until a soft dough forms.

Turn the dough out onto a floured surface and knead for 5 minutes, or until smooth and elastic.

Place the dough in a greased bowl and cover with a clean kitchen towel. Let it rise for 1 hour, or until doubled in size.

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Punch down the dough and transfer it to the prepared baking sheet. Shape it into a rectangle, about 1/2 inch (1 cm) thick.

Using a sharp knife, make diagonal cuts on both sides of the dough, creating a leaf-like pattern.

In a small bowl, combine the olives, sun-dried tomatoes, rosemary, and minced garlic. Spread the mixture evenly over the dough.

Bake for 20-25 minutes, or until the fougasse is golden brown.

Remove from the oven and let it cool for a few minutes before serving.
