  1. Rinse the dried peas and soak them in water overnight.
  2. Drain the peas and rinse again.
  3. In a large pot, add the peas, water, and smoked ham hock. Bring to a boil and let it simmer for 1 hour.
  4. Meanwhile, chop the onion, carrot, and potato.
  5. After 1 hour, remove the ham hock from the pot and shred the meat. Discard the bone and fat.
  6. Add the shredded meat, chopped vegetables, salt, pepper, and bay leaves to the pot. Simmer for another 30 minutes or until the vegetables are tender.
  7. Remove the bay leaves and serve the soup hot, garnished with fresh parsley.
