Fattoush Salad
Fattoush salad is a traditional Lebanese dish that dates back to the 19th century. It was originally created as a way to use up stale bread, which is why it includes crispy pita squares.

Preheat the oven to 350°F (175°C). Cut the pita bread into small squares and toss with 1 tablespoon of olive oil. Spread the pita squares on a baking sheet and bake for 10 minutes or until crispy.

In a large bowl, combine the lettuce, cucumber, tomatoes, bell pepper, radishes, green onions, parsley, and mint.

In a small bowl, whisk together the lemon juice, remaining olive oil, sumac, salt, and black pepper.

Drizzle the dressing over the salad and toss to combine.

Let the salad rest for 30 minutes to allow the flavors to meld.

Just before serving, sprinkle the crispy pita squares over the salad.
