Falafel is a popular street food in the Middle East and is often served in a pita bread with tahini sauce and salad.

  1. Soak the chickpeas overnight in water. Drain and rinse.
  2. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper. Process until well combined but still slightly chunky.
  3. Transfer the mixture to a bowl and stir in the flour until the mixture holds together.
  4. Shape the mixture into small balls or patties.
  5. Heat the vegetable oil in a frying pan over medium heat. Fry the falafel until golden brown and crispy on all sides.
  6. Remove from the pan and let rest for 5 minutes.
  7. Serve hot with tahini sauce, pita bread, and salad.
