  1. Cut the eggplant into small cubes.

  4. Add the chopped tomatoes and cook until they become soft.
  5. Add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.
  6. Add the fried eggplant and mix gently.
  7. Cook for a few minutes until the flavors blend together.
  8. Sprinkle garam masala powder and mix well.
  9. Garnish with fresh coriander leaves.
  10. Serve hot with roti or rice.
