Cut the eggplant into small cubes.

Heat oil in a pan and fry the eggplant until golden brown. Remove and keep aside.

In the same pan, add more oil if needed and sauté the onions, garlic, and ginger until golden brown.

Add the chopped tomatoes and cook until they become soft.

Add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.

Add the fried eggplant and mix gently.

Cook for a few minutes until the flavors blend together.

Sprinkle garam masala powder and mix well.

Garnish with fresh coriander leaves.

Serve hot with roti or rice.
