The vibrant green color of this soup comes from the combination of spinach, broccoli, and zucchini.

  1. Heat olive oil in a pot and sauté onions and garlic until translucent.

  4. Remove from heat and let it cool slightly.
  5. Using a blender, blend the soup until smooth.
  6. Return the soup to the pot and reheat if necessary.
  7. Stir in lemon juice.
