Falafel is believed to have originated in Egypt and has been a popular street food in the Middle East for centuries.

Soak the dried chickpeas in water overnight.

Drain and rinse the chickpeas.

In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, and salt.

Pulse until the mixture is well combined and forms a coarse paste.

Transfer the mixture to a bowl and let it rest in the refrigerator for 30 minutes.

Shape the mixture into small patties or balls.

Heat vegetable oil in a frying pan over medium heat.

Fry the falafel until golden brown on all sides.

Remove from the pan and place on a paper towel to remove excess oil.
