Rinse quinoa under cold water.

In a saucepan, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes.

While quinoa is cooking, toast the almonds in a dry skillet over medium heat until lightly browned. Set aside.

Chop cherry tomatoes, cucumber, red onion, and fresh parsley.

In a large bowl, combine cooked quinoa, toasted almonds, cherry tomatoes, cucumber, red onion, and fresh parsley.

In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the quinoa salad and toss to combine.

Let the salad rest for 5 minutes to allow the flavors to blend.
