  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon powder, nutmeg powder, and coconut sugar.
  3. In a separate bowl, mix together the unsweetened applesauce, almond milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the chopped walnuts and raisins.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let cool in the pan for 5 minutes. Then transfer the muffins to a wire rack to cool completely.
