  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add vegetable oil, maple syrup, vanilla extract, and almond milk to the mashed bananas. Mix well.
  4. In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. If desired, fold in nuts or chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
