Rinse the red lentils under cold water.

In a large pot, heat some oil and sauté the onion, carrot, celery, and garlic until softened.

Add the red lentils, vegetable stock, cumin, paprika, and turmeric to the pot.

Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are cooked through.

Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.

Stir in the lemon juice, salt, and black pepper.

Serve the soup hot, garnished with fresh cilantro.
