In a blender, combine tofu, almond milk, maple syrup, and vanilla extract. Blend until smooth.

In a mixing bowl, whisk together flour, baking powder, and salt.

Pour the tofu mixture into the bowl with the dry ingredients. Stir until well combined.

Heat coconut oil in a non-stick skillet over medium heat.

Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
