Banana bread became popular during the Great Depression as a way to use overripe bananas that would have otherwise been thrown away.

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large mixing bowl, mash the ripe bananas with a fork.
  3. Add the vegetable oil, maple syrup, vanilla extract, and almond milk. Stir well.
  4. In a separate bowl, whisk together the gluten-free flour blend, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the chopped walnuts and chocolate chips.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let it cool in the pan for 10 minutes.
  10. Transfer the banana bread to a wire rack to cool completely before serving.
