  1. Heat sesame oil in a large pan or wok over medium heat.
  2. Add minced garlic and chopped scallions, and cook until fragrant.
  3. Add carrots and cook until slightly tender.
  4. Push the vegetables to one side of the pan and crack in the eggs. Scramble the eggs until cooked through.
  5. Add cooked rice, edamame, frozen peas, soy sauce, salt, and black pepper. Stir-fry for a few minutes until everything is well combined and heated through.
  6. Remove from heat and let the fried rice rest for 5 minutes before serving.
